Baigan Bhujia, Eggplant Sabzi, Brinjal curry

I discovered the deliciousness of homecooked sabzis after my marriage at my home my parents home I was not a big fan I cannot explain the reason my be i was spoiled lol but Alhamdulillah now i can say i love sabzis not all of them lol take those karelas away from me cant eat them sorry.
let get to our recipe of this week baigan i think its one of my favorite specially if its cooked this way so easy yet so good traditionally eaten with daal chawal but for me i would prefer naan my brother he would run to grab some naan when Ammi cooked baigan her recipe is different still delicious but I will go with this on my saas ( mother-in-law) recipe.
ingredients:
One large eggplant, baigan, brinjal
3 large tomatoes chopped
1-2 large potatoes cubed(optional)
1 medium onion sliced
1/4 tsp fenugreek seek, meethi dana
1/2 tsp tumeric powder
1 tsp or to taste red chili powder
salt to taste
1/2 bunch cilantro chopped
2-3 green chilies
3 tbsp. oil
Direction:
heat oil in a pot at meethi seeds fry till black lower the heat
add sliced onion fry till pink
add cubed baigan, tomato and one green chili ( add potatoes too if using)
add all the spice turmeric, red chili, salt fry until fragrant
now add half of the chopped cilantro
fry for few minutes
add 1/2 cup water
cook for 5 minutes if using pressure cooker
otherwise cook covered on medium low until baigan and tomatoes are tender
bhuno or cook on high heat mash the baigan until sabzi reaches your desired consistency
dish out sprinkle with cilantro and sliced green chili
serve with hot naans or daal chawal and enjoy!!
